Why
Some dishes cannot sit in a case.
Some of the cooking Siu Chen grew up with does not fit a daily counter. A curry that needs most of a morning on low heat, or a dish that only makes sense cooked in one large batch, cannot sit in the case every day of the week.
So they take turns. One a day, announced ahead so you can come on the day you want it.
When each one is announced
